Asparagus Stew Andalucia Style - Malaga Napalm

Asparagus is grown all around the area of Villanueva del Trabuco, Malaga, northeast Malaga province in Andalucia, Spain.

Asparagus is delicious in any form, raw, cooked, in salads, stews, soups, grilled, you name a dish and it can be used in it, with it or part of it.

My own way, or ways, of using fresh, delicious Asparagus is twofold.

I use the top third steamed as a side dish, fried, grilled or boiled.

The second portion, I use as a stew or soup. It's very easy, quick and makes great use of the plant.

Take all of your Asparagus parts and boil them, along with some garlic, onions and potatoes. When soft, use a hand blender to make them into a thick stew and let this simmer for 10 minutes. careful now! Keep the lid on the pot, this stuff isn't called 'Malaga napalm' for anything. It bubbles and pops and you might get a splash or two on you, trust me, it burns.

Serve with a splash of cream and top with a sprig of Parsley. I also like to add a swirl of hot chilli sauce, as a winter dish.
